Parmesan Crisps!!!

A friend of mine introduced me to this new little snack, chip, biscuit, whatever…I love these!!! Lacy goodness!!! The grown up version of goldfish crackers. Yeah, I tried to pass these off on my 8yr old- No dice.  You can eat them by themselves or with a a cup of tomato soup with dill and a slice of sourdough. Ahh, heaven!!! Granted its the middle of summer and this would be an idea meal on a cold rainy SoCal day. I look inf the internet to find the recipe and ther are serveral variations, so I just improvised.


3/4 cup  shredded Parmesan cheese (preferably Parmigiano-Reggiano), I’ve use Mozzarella but prefer Parmesan

1 tsp of Italian Seasoning Blend Herbs


Preheat oven to 350°F and line a baking sheet with parchment paper.

In a small bowl stir together Parmesan and Italian Seasoning blend. On prepared baking sheet spoon level tablespoons of mixture in mounds 4 inches apart and spread mounds gently into 3 1/2-inch-longrounds. Bake crisps in middle of oven until golden, 8 to 10 minutes, or until golden brown. Cool crisps completely on baking sheet and remove carefully with a metal spatula.

What I’m Loving…Grab the Gold Post-Workout Bars – Homemade

Apparently these post workout nutrition bars are all the rage and available at Smoothie King. I don’t have a  Smoothie King near me and don’t patronize the local Jamba Juice simply because of the high fructose content that would blow my daily caloric intake in one drink. So SuperGlueMom’s and her fellow blogger were the first I had heard of Grab the Gold bars.

I made a batch of these homemade Grab the Gold bars after seeing a follow blogger of Superglue Mom post and variation on this work out bar. I’ll provide SuperGlueMom’s link below:

Naturally, I tweaked the recipe by only including 1 tablespoon of Cocoa and 1 tablespoon of Cinnamon. Got kick up that metabolism.  The bar really are good and are a good “Quick Grab” if you heading out the door and need a breakfast in a pinch.

Adventures in Dining: the 360 calorie challenge

Most mornings I’m chasing my kids to the car and often forget to grab what food I pack for a meal, thus I find myself foraging for food at some eatery. Today, it was Daphne’s- California Greek.  Why they changed the name to California Greek, I haven’t a clue. All the same, it’s food and it doesn’t come deep fried, fried, or have the potential of carrying E. coli. I walking and peruse the menu quickly consult MyFitnessPal: 638 calories. Ok so that means minus 100 for afternoon snack, carry the two…ok…approximately 360ish calories. (In my last few outings, I’ve discovered that on average my caloric intake per meal is about 360 on a sedentary day.) I scan the menu board again, squint to read the calories per item and start to piece together a meal of Lemon Chicken Soup, Fire-Roasted Vegetables (carrots and green beans mostly) and H2O with Lemon. Perfect and it’s only 280 calories. The best part yet was that my bill only came to $3.64 with tax!!!

Goat Cheese and Veggies

The other day I stopped in my local Starbucks while I was in between appointments and discovered a new Bistro Box – Goat cheese and Veggies. The box contained: cherry tomatoes, bell pepper strips, Haricots vert- french baby green beans, and Persian Cucumber sticks, with container of  tzatziki sauce,  goat cheese, and a packet multi-grain crackers.  I really like it and it seems easy enough to replicate at home.

Here’s how I did it:

Tzatiki Sauce – Yoguri Yogurt Dip – Garden Vegetable, about 2 tbsp

Goat Cheese- Any brand, 2-3 tbsp, I brought crumbled and now just realized that a chunk/wheel form would have made a better presentation. Welcome to the blogging learning curve, Jen!

Muilt-grain Crackers – Ak-Mak Sesame Crackers 1 or 2

Bell Pepper Strips – You can cut up a bell pepper but I found Sweet Mini Peppers on sale at my local Sprouts, 2-3 peppers.

Persian Cucumber Sticks – I found some at Sprouts on sale, English Cucumbers will due in a pinch, regular cucumbers are fine but I find them boring.

Cherry Tomatoes – I used heirloom cherry tomatoes, about 4-5

Haricots Vert – I found these in the frozen section at Trader Joe’s, 3 or 4 beans.
